I was having a discussion with a co-worker of mine who is going to a Christian college for graduate school. When I hear the term Christian college, i think of: equality, non judgemental, friendly, warm, etc. However this is not the case, well at least from this ladies perspective. She feels as though the teacher is discrimating against the students who are minorites. What would you do in this situation?

"Remember."
If I understand correctly, your co-worker is showing opposite traits of what someone who goes to a Christian graduate school should have. Well, all you can do is remind her whom she serves and that there will always be people who misrepresent the term "Christian". Ethics is learned, but never taught.
